Operation Hot Bod!

Ha ha ha ha! No seriously that is the name of the game!

I decided that I am gonna buckle down and do bet

So I woke up early when I didn't have to, this has been happening more and more lately. So I got my butt to the gym and did 15 minutes of the elliptical and 15 minutes of (I'm not sure what its called) A cross between the elliptical and a stair stepper so ellipti-stepper? Afterwards I did some bicep lifts with 15 pounds weights and then some leg presses with 90 lbs!

Once I got home I made myself a protein shake

I know that may not sound like any fun for breakfast, but I am surprised how tasty and how filling the shakes happen to be. The recipe is used from the abs diet its a variation of the Abs diet power smoothie
Here is the recipe
1 cup of 1% Milk
2 tablespoons of low fat vanilla yogurt
3/4 cup of instant oatmeal (I omitted that one)
2 teaspoons of peanut butter
2 teaspoons of chocolate whey powder
6 ice cubes

Today is my first day of the abs diet for real I will keep you posted on how much I see in ways of change in my weight and my body! Fun Fun!

First try

What a second post in one day???
Well I decided I would try my hand at poached eggs with hollandaise sauce, it was going to be beautiful, on a croissant and all it's loveliness.

First of all I would recommend using an actual recipe and not thro
wing one together. So here is what I started off with.
An Egg yolk(that should have been three, some yellow mustard(that should have been Dijon) and some bottled lemon juice. Notice I say some of because measuring is a foreign concept. I added some melted butter to this in the blender and it turned out so bad I couldn't take a picture. I decided to add some milk to bulk up the volume and it turned out ok.
This is my somewhat mutated hollandaise sauce, I liked the way it tasted but it wasn't as thick as I would have liked.

Now on to the poached egg, that was a total disaster, I don't know what happened! I started off with my egg...

It the perfect egg for poaching, before this I prepared my pot of water. It came up to a nice simmer
This is actual simmering, but I can promise you it did simmer!
I started to stir my pot of water to make a little whirlpool and slid my egg in very slowly and.....
It was a disaster, stringy egg whites filling the pot, nowhere around the yolk! (no picture was taken of this disgusting disaster of course) I was embarrassed to say the least. Why? I guess its just my competitive spirit or hard headed-ness.
So I decided to make another egg and just "poach" it in the microwave. No mess, no water, not as good, but still eggy. I put it on the top of my toasty crosiant and covered it with my mutant hollandaise.

I think next time I may practice my poaching techniques before I try this again, I will also try to work on my food photography, so it will get better (I hope :/)





Morning!!!

I am thinking about a change!!!
That change happens to be making a commitment to writing in my blog! Here is my issue I have a hectic schedule, I have massive amounts of homework and sometimes I just get darn lazy! So I need to think of some ideas to keep me going! Here is what I am up against

  • 8:00-9:15 am Calculus Class on Tuesdays and Thursdays
  • 9:30-10:45 am Inquiry class on Tuesdays and Thursdays
  • 2:00-4:45 Classroom Management class on Tuesdays
  • 2:00-4:45 Service Learning Class on Thursdays
  • 2:00-2:50 Calculus Recitation on Wednesdays
  • 5:30-8:15 Behavior Management on Wednesdays
  • 9:00-11:45 Mexican American Culture on Saturday mornings
That is just my school schedule, I plan on working out 5-6 days a week starting this Monday, even though I haven't been too regimented about it. After all of that I have to plan my Wedding which is not the easiest thing in the world when you are doing it yourself.

Also I want to take more pictures and keep things more entertaining. So I will make it my goal to post once a day Monday-Friday. I'll leave Saturdays and Sundays optional because I get super tired!

Lunar Eclipse!

Finally after more than 300 years we got to see it!!


It was really fun to wake up in the middle of the night and watch the sky for the eclipse. We set our alarm to drowsily walk outside and see the event. The stinky thing is how cloudy it was. We tried to take some pictures and got one good one, then the moon was completely covered, not by the shadow but by all the clouds. We decided that we would catch a couple more z's and then look once again. (This was really hard for me because I really wanted to sleep) Sad news we didn't get to see much it was all cloud cover. I knew this before had though, I looked up on Google news and they said the lunar eclipse would be eclipsed by the clouds.

Oh well, I have had a wondrous start to my holiday break! First I passed my generalist test!!!! Yay Yay Yay! I can't believe that I passed. This is due to me second guessing myself in everything, everyone told me I would pass, but I sat there and worried that they were all wrong. In the long run I could have just believed them because I got an awesome grade!

Second I got straight A's, this means that I get to graduated summa cum laude! It's because UTSA doesn't factor in your last classes in to the GPA! Mine is a 3.93 so I get it! well so many things are going on that I cannot believe! I now have to create my portfolio, beef up my resume, get some good letters of recommendation, and work on my interview skills. UTSA had all of their Education students buy a membership to a program called Live Text, at first I didn't like it. 1. It was 99 dollars, 2. we already have a similar program(I thought) called blackboard, and 3. It was intimidating! Now I really do like it because it has this option for an online portfolio. This is really neat because you can create all of these projects and pictures, then compile them to show to your prospective employer. I think I'm gonna start tinkering around with it and get it going.

Now that all of my school stresses are over I have to start loving my body again! I have been really bad on what I've been eating and avoiding exercise. This isn't a very good thing because it is a slippery slope that ends in being overweight and unhappy. So I have decided to re-dedicate myself to fitness. I am writing up my meal plans and making things a little easier on myself.

It may be crazy to start a healthy living plan during Christmas, but I will keep on track. I will have my Christmas in moderation so I don't start down a slippery slope! Ok till next time.

Chilly Willy

I cant believe how cold it is outside!!!!
We live in south Texas, so I like the occasional chill break, but JEEZE! I have a lot to do today. I am tweeking my 5 E lesson, my interval C, and studying for my generalist exam. I am going for a run today, in the AM, I think it will be really nice. Usually I run mid afternoon, but mornings seem nice, especially since I don't have class or a field placement. Off the beaten path

Hello all,

I am super drained from this lovely holiday that just came upon us. I overate, under-exercised, and am now reaping the benefits of it. Oh well a new week is always a good start.

I also have eleven days to study hard for my generalist exam. I know the content but I just want to be very prepared, rather then just will nilly taking a test. (it was also 120 dollars, so I'd like t pass on my first try)

I can't believe we are almost in December, it is my favorite month of the year. Here is my top 10 reasons why I love it.
  1. Christmas duh- its great no more no less
  2. The weather- don't get me wrong I love the blister summers here, but this much needed cold weather is always fun. Now you may think I crazy, but I enjoy the rain/wind/hurricane weather that we get as well.   4. Cutting down Christmas trees

  8. News years celebrations (I like the ones I where there is snow involved)(even though I hate snow)
  9. Christmas cruising, a little explanation, me and my really close friend drive around all over the place and look at Christmas lights. We creep around like crazies, but its awesome.

"And I was runnin' "- Forest Gump

Don't you just love that movie? Well I thought it was an appropriate start to the week ahead. My sister and I have started a training schedule so we can compete in the San Antonio Rock and Roll Marathon 2011. We tried to start up last week, but there were some interferences
  • Monday- Nothing interfered we ran the mile and a half in our neighborhood. Problem was that we had planned to work out upper body and it didn't happen.
  • Tuesday- I have school from 8am-8:15pm so I did some running on the treadmill ( I do know that it isn't the same as running on the pavement). So we didn't run either.
  • Wednesday- I had my last field placement for this semester YAY!!! I also donated blood. Which is not conducive to running long distances. (because a mile and a half is long distance, I asked). So no running once again.
  • Thursday came around and I did make it to 2.67 miles on the treadmill which made me happy, yet doesn't really count.
  • Friday- I have to admit I flaked, I was really excited about seeing people from Harris and having a good time that i decided not to run. Which sissy was not thrilled about but she secretly was dreading running again.
  • Saturday-Felt super duper bad and pushed my self on the treadmill, a full three miles! yes go me!
  • Sunday- always a rest day-but my muscles were killing me, I guess if I am going to push really hard with the cardio, I should take it easy with the lifting.

Ok I have more awesome News, the fiancee and I have set a wedding date (well more like I set one, but it doesn't matter) I will post more on it at a later date. It is 18 months away which seems like the perfect amount of time.


Now off to class so i can finish up the semester.
FYI I am taking my certification test soon so i will be locked down for the next couple of weeks. It's Ok though, gotta study, study, study!
