Lunar Eclipse!

Finally after more than 300 years we got to see it!!


It was really fun to wake up in the middle of the night and watch the sky for the eclipse. We set our alarm to drowsily walk outside and see the event. The stinky thing is how cloudy it was. We tried to take some pictures and got one good one, then the moon was completely covered, not by the shadow but by all the clouds. We decided that we would catch a couple more z's and then look once again. (This was really hard for me because I really wanted to sleep) Sad news we didn't get to see much it was all cloud cover. I knew this before had though, I looked up on Google news and they said the lunar eclipse would be eclipsed by the clouds.

Oh well, I have had a wondrous start to my holiday break! First I passed my generalist test!!!! Yay Yay Yay! I can't believe that I passed. This is due to me second guessing myself in everything, everyone told me I would pass, but I sat there and worried that they were all wrong. In the long run I could have just believed them because I got an awesome grade!

Second I got straight A's, this means that I get to graduated summa cum laude! It's because UTSA doesn't factor in your last classes in to the GPA! Mine is a 3.93 so I get it! well so many things are going on that I cannot believe! I now have to create my portfolio, beef up my resume, get some good letters of recommendation, and work on my interview skills. UTSA had all of their Education students buy a membership to a program called Live Text, at first I didn't like it. 1. It was 99 dollars, 2. we already have a similar program(I thought) called blackboard, and 3. It was intimidating! Now I really do like it because it has this option for an online portfolio. This is really neat because you can create all of these projects and pictures, then compile them to show to your prospective employer. I think I'm gonna start tinkering around with it and get it going.

Now that all of my school stresses are over I have to start loving my body again! I have been really bad on what I've been eating and avoiding exercise. This isn't a very good thing because it is a slippery slope that ends in being overweight and unhappy. So I have decided to re-dedicate myself to fitness. I am writing up my meal plans and making things a little easier on myself.

It may be crazy to start a healthy living plan during Christmas, but I will keep on track. I will have my Christmas in moderation so I don't start down a slippery slope! Ok till next time.

Chilly Willy

I cant believe how cold it is outside!!!!
We live in south Texas, so I like the occasional chill break, but JEEZE! I have a lot to do today. I am tweeking my 5 E lesson, my interval C, and studying for my generalist exam. I am going for a run today, in the AM, I think it will be really nice. Usually I run mid afternoon, but mornings seem nice, especially since I don't have class or a field placement. Off the beaten path

Hello all,

I am super drained from this lovely holiday that just came upon us. I overate, under-exercised, and am now reaping the benefits of it. Oh well a new week is always a good start.

I also have eleven days to study hard for my generalist exam. I know the content but I just want to be very prepared, rather then just will nilly taking a test. (it was also 120 dollars, so I'd like t pass on my first try)

I can't believe we are almost in December, it is my favorite month of the year. Here is my top 10 reasons why I love it.
  1. Christmas duh- its great no more no less
  2. The weather- don't get me wrong I love the blister summers here, but this much needed cold weather is always fun. Now you may think I crazy, but I enjoy the rain/wind/hurricane weather that we get as well.   9. Christmas cruising, a little explanation, me and my really close friend drive around all over the place and look at Christmas lights. We creep around like crazies, but its awesome.

"And I was runnin' "- Forest Gump

Don't you just love that movie? Well I thought it was an appropriate start to the week ahead. My sister and I have started a training schedule so we can compete in the San Antonio Rock and Roll Marathon 2011. We tried to start up last week, but there were some interferences
  • Monday- Nothing interfered we ran the mile and a half in our neighborhood. Problem was that we had planned to work out upper body and it didn't happen.
  • Tuesday- I have school from 8am-8:15pm so I did some running on the treadmill ( I do know that it isn't the same as running on the pavement). So we didn't run either.
  • Wednesday- I had my last field placement for this semester YAY!!! I also donated blood. Which is not conducive to running long distances. (because a mile and a half is long distance, I asked). So no running once again.
  • Thursday came around and I did make it to 2.67 miles on the treadmill which made me happy, yet doesn't really count.
  • Friday- I have to admit I flaked, I was really excited about seeing people from Harris and having a good time that i decided not to run. Which sissy was not thrilled about but she secretly was dreading running again.
  • Saturday-Felt super duper bad and pushed my self on the treadmill, a full three miles! yes go me!
  • Sunday- always a rest day-but my muscles were killing me, I guess if I am going to push really hard with the cardio, I should take it easy with the lifting.

Now off to class so i can finish up the semester.
FYI I am taking my certification test soon so i will be locked down for the next couple of weeks. It's Ok though, gotta study, study, study!

Wonderful, Wonderous, Hamburgers

Well good morning to everyone! I had a wonderful day yesterday and this morning as well.

Last night we went to La Tuna, O.M.G. I can not believe how delicious the hamburgers were! MI FI, (my fiancee) had a hamburger with cheddar, guacamole, bacon, grilled onions, and grilled jalapenos. My "burger" was made of black beans and had guacamole, salsa, cheese, onions, tomatoes, lettuce, and pico!!! (I love pico).

Regretfully I did not take any pictures, which I should have because my was this place an experience.


First getting there was fun because the restaurant was off of South Alamo Street and Probant. I wanted to put it into my phone's navigation program, but MI FI
wanted to go off the directions some one had given him. Then we drove around for not too long and found it. I was really scared at first because all we saw was the bar section which was really small and not connected to the restaurant and a very full parking lot for 6:30 on a Thursday night. Well the problem was solved because we walked up to the bar, realized it was not the actual restaurant and then proceeded to where we were to be eating. The coolest thing I saw was La Tuna's sand/gravel is made up of beer bottle tops! If we go back I will definetly take a picture. All and all it was a great experience.


This morning was also a great experience!

I got to register for my last semester of classes at UTSA!!! Oh I am so excited mixed in with so scared. I have this last semester and my certification test to do and I am done. It scares me because I have been in school for a relatively long time, now I have to go find a job. That is also scary considering the lingering effects of the broken economy. I have faith though, I know that God above has a plan for me and I will have to follow it.

It is Friday

I am here at school, just hanging out. No I am just lying, I have to be here at this ungodly hour because I am meeting with my advisor to talk about graduation in may. I am super psyched about it and can not wait!!!! (by the way I don't think 8:30 is ungodly most days, it just that Fridays are my only day of the week that I get to sleep in) Well it was a great morning, I threw on my clothes washed my face and brushed my teeth. That is the extent to which I get ready in the mornings when I know I have to do something later on today. Then I had a Mickey-K's McMuffin. Its my version of the Egg McMuffin at Mickey-D's. The differences are that I use only egg whites and a low-cal english muffin. I also took my evening primrose oil this morn! Ok so I have come to another conclusion, as I always do, every time I think that I am going to dedicate myself to blogging daily it rarely happens. Now that it is the end of the semester I have been inundated with so much work blogging has to take a back seat for a little while. I really love blogging and each time I do it makes me feel happy. I want to get a better camera to help with my photos for this blog. That would be a nice present if anyone is listening. Ha ha, well I better get going I've got stuff to get done.

Oh how the day has been good to me

I have had a productive day, I got a test grade back and did surprisingly well. I am really bad about studying for things that may not affect my grades very much. Yes it was a midterm, but it was only worth 40 points out of 320 points for the whole class. I got 33 of the points, but I could have been better.

There is one thing that I do have to say though, I got stuff done today. It was really relieving because I finished three papers that were each about 5 pages each. Then had time to make myself lunch of red pepper hummus with wheat thins and lentil soup. It was filling even in the absence of meat. I also got to make breakfast sandwiches for my self. I made them up and saved myself a ton of money. I can make like 12 of those little sandwiches for about 3 dollars instead of 4.50 for 4 of them that aren't as good as my own.
Then the fiancee came home and we ate a casserole that I made and it was surprisingly yummy. I was a little bit scared, but it turned out great! Well for tonight I'm settling into another paper and studying for my Generalist exam.

Been on hiatus

I have been neglectful once again, it is really easy to say, oh no writing tonight, I'll wait until tomorrow. Its OK though I will always come crawling back apologetically. I have been pretty busy lately. Of the six classes I am taking three of them involve twenty hours of field work . It has been a great experience though. I am just trying to keep calm and relax, it is all I can do to make it through.

Interesting

Running around like a chicken with it's head cut off is how I spent my day.

I really did have fun though, my day started off wi
th school at 8 am, then I went from there to my house. I got to hang out for about an hour which made things real nice. Then I went to my very first laser hair removal appointment. I surprised myself by being relatively calm.
I have heard it can be painful at times. I did it, yes no wussy
here! After having a lovely conversation with the lady doing the "lasering". I met up with my little sis, we hit the gym real hard. Thirty minutes of cardio then lot of free weights for arm sculpting. I finally got home I was red in the face.


Instead of relaxing, maybe for a little while I decided
I needed to do homework.
Then study for my educational psychology exam, which is actually really colorful for typed notes.

I stopped in between to have a second lunch since my first consisted of cottage cheese and a banana. I ate lentil soup, which was a little frightening because it might taste funny! :/
It tasted great by the way, I chopped up a little onion, cilantro, and a quarter of an avocado. I didn't want to take a picture because it didn't look like the picture on the front of the can. It tasted divine and I will enjoy the other half of the can at a
later date.

A while later I decided that I had to make our dinner for Tuesday night, I planned
to make shepherds pie and it was accomplished. Here are some fun photos of my prep skills.

A new-ish start

I have made a commitment to my poor little blog and I really want to keep it. I know I have neglected it but now is the time to get back on track.


So I'm going to start by saying I started this blog because I love food, I love it a whole, whole lot. Now I am trying to take a more pro-health stance on food, rather then who marvelously delicious my food is. I will never stop loving food, but right now I want my body to be at an optimal level. I am going to start tracking my activity level and my food intake for the day on my blog. I am also going to keep my great personality involved so no worries.

Here we go on a new journey, I'm at school right now, I should be reading this book for my class but am pushing it to the last minute, like always. Did I mention that I am taking 18 hours that involve 60 hours of field work? It is true, but I will try and revive my commitment for the day!

Why I worry about things I can't control

My stomach and head have been doing a number on me.

First of all, I have been super stressed out about school, not just school stuff that is happening this semester, but much more and it isn't fun. Here is the break down:
  1. I have to take my Generalist exam in December and pass it mind you. I am really nervous because of the amount of content. I am also nervous about how the test is set up, they give you these situation questions with four answer choices. The problem is that the four choices all sound great! GAAAHH, I can't stand it.
  2. I have a lot of classes this semester, 6 classes, 60 hours of field work ( in two separate schools), and so many books that I had to create a filing system to manage them all.
  3. I'm getting married in the not to distant future, my future husband and I have yet to set a date or even talk about the wedding.
  4. Last but not least, I am a terrible procrastinator. I can't help it, I know I have three assignments due and yet I feel the need to play hours of tetris. I need an intervention
I have taken steps to quell all of my self induced sickness, I have started using my planner to... wait for it......oh you will never guess.....Plan My Day! Usually when putting stuff in a planner it consisted of what is due and some important dates. Now i have a daily play by play of what I will do and when I will do it. I didn't follow it yesterday, which was a mistake because I got to freak about it when I got to school, but it did work out. I just had to put those extra stressful moments into my day.

Why does the title say "things I can't control" when you really are in control of them, you might ask.
That had to do with me meeting with my advisor and loosing sleep the night before. I freaked myself out because I had a meeting to talk about graduation and I thought he was going to tell me I missed a huge chunk of classes and I would have to stay another year. GOSH I WAS STRESSED! It ended up working out though because I am graduating this may and I will pass that certification exam, and will get a job. Until then I will just have to do my best.

Semi-Cabin Fever

I Love TETRIS
I was really excited about Friday, I didn't do too much. The day started off with a marathon of Tetris. I love playing tetris on Facebook, it's almost like an addiction because I had to pull myself away from it to shower. After that I got a little camera happy I took some shot of me and of BD. She has this little mechanical hamster that moves around and makes crazy noises. I had to take pictures of it because it makes me laugh.

I then headed over to see what my parents were up to. I brought over a bottle of wine, it called Fish Eye Merlot. http://www.badgerwest.com/fisheye.shtml
My opinion on the wine is that it was a little acidic, but mellowed out and had nice fruity flavors. My Mother didn't drink it because she is a wine expert now. I can't lie though her wine was a little bit better then mine. I don't know the name though, I'll have to get back to you on that.

While driving back to my house I got stuck at the light at Nacogdoches and Higgins road. So I decided to take a picture of the street sign and send it to CPS and tell them they need to fix it, because its an awful long wait. Well as I was being a weird child taking a picture of a street sign, I noticed out of the corner of my eye that the person in the car to my left was looking over. I thought to myself "oh great creeper alert!". I didn't look over until I got a phone call from a friend making fun of me!!!

Later on in the night the fiancee and I went to go and visit our really good friend A at her work. It was a fun night. We played Word feud on our phones all night. Its like scrabble for your android phone. With intermittent conversations with A we stayed out for a good while. Well now is the time to figure out what I'm gonna do today. Any suggestions?

A New Semesta!


School is Back in session!
I am very excited about this new semester I am starting a UTSA, so much is going on right now. I have six classes that I am taking and three of them include field work. So 60 hours of field work on top of six classes makes me really tired at the end of the day!



I am still allowed to have fun during the weekend though. They let me out long enough to do that.


I have already read a novel called Feed by M.T. Anderson. Its young adult science fiction, I actually enjoyed it. Its bases is that we are in the future and Americans have a feed installed into their brains. The Feed is like the internet automatically installed in your brain. It makes me think, "Is this where our society is headed?" Oh, my next book is Roll of Thunder, Hear My Cry. A multicultural book that is geared more towards the lower grades and by lower grades I'm talking about 4th and 5th.
It is really interesting because it deals with pre-civil rights south. So once I am done with it I can tell you if I like it or if it really isn't for me.

This morning for B-Fast I had egg whites, pico de gallo, fat free cheddar and a nice whole wheat tortilla. It was delicious.

well I ate all of it and then decided to

share some wonderful pictures that I have taken over the down time I have taken from my blog duties!



This little girl was hanging out next to a swimming pool, I've never seen a real praying mantis before. I do have to say that is real lighting, she looked more green. (The reason why I am calling her a girl is because she looks big and I heard through the grapevine that the females are bigger and they rip their mates heads off!)This right here was last Tuesday, it was a monsoon! I had to drive to Harlandale right before I took this picture. It was a miserable ordeal, I was using the GPS on my phone and driving the Fiancee's car, so it was scary. But this is at UTSA and it was torrential!

This is a delicious 10 layer cake that my dad made awhile back. I love that we both have an affinity for great food. The cake I really don't know the ingredients for, but I do know that frosting was a chocolate ganache.

Getting stuff done

I put some finishing touches on my lesson plan for my ESL class. I just love looking at it and seeing how much progress I have made since the last time I saw it. Wow I cannot wait for this week to be over, I think that it may just drag on for the rest of my life.

Enough of that, I had a good lunch from subway, It was a turkey sandwich on wheat bread with tomatoes, spinach, onions, and mustard. I forgo the cheese because I can rarely taste the difference when there is cheese, so why not leave out the extra 50-100 calories. I also got a gigantic diet Pepsi, I know diet soda is no bueno, but I can't help it. Its like crack, once you have it, you've always gotta have it. Anyways I am happy that temperature out side is not ungodly, I love that I can sit outside and feel a breeze that doesn't feel like a hair dryer blowing in my face.

For tonight I am hopping that we have a chicken, tomatillo, and cheese skillet for dinner. Its kind of like deconstructed green enchiladas. I like it because you don't have to roll all of the searing hot tortillas and it actually has a lot less fat and calories in it. This is because you use less oil, cheese and tortilla. It is really satisfying though. I am going to be so nice a put the recipe up right now. I may even have pictures of the making of....that is if I can charge my camera in enough time.

Chicken, Tomatillo, and Cheese Skillet

Ingredients
7-10 tomatillos dehusked and rinsed.
1 lb of chicken breast
1/2 a medium onion
1 jalapeno
3 garlic cloves
4-5 corn tortillas
2-3 tbsp of "Hot Salt"(its salt with cayenne, chipolte, and red pepper)
2 tbsp of canola oil
1/2 cup of shredded cheese.

Directions
1. In a pot big enough to submerge in water, throw in tomatillos, 1/2 medium onion(cut into manageable pieces), jalapeno with the stem cut off and 3 peeled garlic cloves.
2. Bring to a boil, then reduce to a simmer until tomatillos are army green.
3. while water is coming to a boil, cut chicken breast into strips or cubes.
4. Season chicken with Hot Salt or whatever seasoning you prefer.
5. heat up a skillet to medium heat with 2 tbsp of oil.
6. add chicken breast to skillet and cook until no longer pink.
7. Once tomatillos, onion, garlic, and jalapeno are done cooking drain off water.
8. Place vegetables in a blender, leave a little opening for steam to escape.
9. Blend until you have a soupy consistency, no longer then a minute of blending.
10. Add tomatillo sauce to cooked chicken.
11. tear up piece of corn tortilla and add to the chicken and sauce.
12. Once the tortillas look soft add 1/2 cup of shredded cheese.
13. enjoy.
Makes about 4-6 servings

Second to last Tuesday

Well I am really excited about a number of things.
  1. Summer school is coming to an end! This is the last whole week, then finals next week and I am free.
  2. Steven and Chris' birthday on the 5th. I can't wait we may have fun at the river or beach, hopefully hurricane Alex doesn't push all the oil up to the coast.
  3. I am getting ahead on all of my school work so the weekend can be tons of fun.
Those are things to be happy about. This last week I totally forgot about healthy eating and all the other benefits of being a mindful eater. I am back on track as of today. I had a healthy breakfast consisting of oatmeal filled with chia seeds, peanut butter, honey, and a little bit of cinnamon ( to keep my blood sugar normalized).

Funny thing I have noticed out here in front of the HSS building where I sit before my first class there are noises coming from all the construction. What is funny about those noises, is that they sound like the preview to the movie Inception. I can't wait for that movie to come out. I really think that Leonardo DiCaprio has made a giant comeback. I've got to get movin' class is calling my name.

I am geography-ing it up!

I found this cool little website that quizzes you on names of countries and their capitals. I was really cool because you can go through them as many times as you like. I'm studying for a geography test and I decided to quiz myself on the locations and capital cities of South America, I know all of the countries starting from the upper left-hand corner is Colombia, Venezuela, Guyana, Suriname, French Guiana, Brazil, Bolivia, Paraguay, Uruguay, Argentina, Chile, Peru, Ecuador, and I think that is it, let me check real fast....................................Yay I'm right. I didn't look at any notes or anything to help me name all those. Now I just have to memorize the capitals.
I have a couple of them like Santiago for Chile, Buenos Aires for Argentina, La Paz for Bolivia, Cayenne for French Guiana, Georgetown for Guyana, Caracas for Venezuela, I think its Botega for Colombia but I am sure I spelled it wrong. Oh well geography shouldn't be too bad for tomorrow since I am actually studying and am in a study group.


Oh yes I went to the mall during my break and got lots of goodies, underoos from Vickie's and Bath and Body work stuff. I just love shopping even though I end up buying things that I didn't plan on. I was there to buy a purse that goes over the shoulder. NEWS FLASH! in all of the places I looked I couldn't find one that was reasonably priced(serves me right for going to La Cantera) or one that I actually liked. I was looking for one that had a bit of an India theme to it. Like really rich colors and a neat pattern. No luck but I did find a pair of underwear with a cupcake on it. That is all that really matters anyhow. Ok back to studying, got stop reading blogs.

Its Hump Day!

Yay for Wednesday, I am feeling the end nearing and I love it! I had such a boring day yesterday I thought I might scratch my own eyes out just so I could go home.
Here is what my day was like yesterday:
9:15- went to class
10:45-out of class, went to the main building and played on my computer.
12:00- was really hungry so I went to subway
12:30- eating lunch in the main building and listening to the freshman camp, side note I am glad I didn't have to do that. When Sarah was in it she hated it and I can tell why!
1:00-4:00- I was trying to keep myself sane before class. I was on failbook and a couple of other really funny sites. There is only so much you can read with out feeling totally drained.
4:15- in geography class where there is an older student, whose life goal is to offend everyone in the class with how ignorant he really is! One of the other classmates told me I turned beat red after he started talking. He was talking about how the Muslim religion was spread by mercenaries that made people convert or you got your head chopped. He spent about ten minutes arguing with the professor about it. I don't know about you, but I was quite shocked, I am not a follower of Islam, but there are people in the class who may and it was a very demeaning way he was talking. I know that even if I am not Muslim, that I still have to respect people as people. I learned that you love your neighbor So poo on him!

A New Routine

I have a new routine for these last weeks of school. I get to school and go to my early class at 9:15, I'm usually early so I can get good parking. Then I have from 10:45-4:15 to do what ever I please. I am going to use it to finish up homework, study, write in my blog, and surf the net. Do people say that anymore? Oh well I can say because that's what I do. Mainly my surfing consists of reading other peoples blogs. Its really great.

For my breakfast I was planning on making some awesome oatmeal. I was really sad to see that I threw away my bananas. It was a choice that I wish I didn't make, because they were perfect for oatmeal, but not so nice on the eyes. So in lieu of my delicious oats I had myself an egg, two egg whites, a hundred calorie English muffin and some cheese on the top. I had some coconut chai tea to drink, but I made the decision to have a cherry Dr. Pepper with my B-fast. The best decision I made all day! I really have a love for Dr. Pepper and ever since they came out with Dr. Pepper Cherry, I can't get enough.

As of right now I am going to trying and look up some nice lesson plans to think up for science and the environment. I really love coming up with lesson plans right now. There is just something about them that makes me giddy inside. You can tell I am a complete dork, alas I already knew.

So much more relaxed

I am loving summer school now that I don't have to freak out about my classes. Its great, today I went home after my first class to go and spend a little bit of time with Steven. It was really fun we went to go and eat Thai food.

My weekend was very fun, we celebrated one of our friends birthdays.The best part about it was the giant slip and slide that every one beat themselves up on. It was exciting, but after you slid down a couple of times you start to notice all of the nasty bruises that appear on your stomach. All and all it was a great day.Good times!

Very tired

I had a busy morning and I am super sore. This weekend was awesome, I loved it, but now back at school. I had a good breakfast with eggs, cheese and a light english muffin. I got some stuff done and now to my classes. I am so relieved that I don't have math anymore. It was a blessing but I gotta go I'll post more when I am outta of class.

Mixed Emotions

Well I have a two very strong emotions going on right now. Let me explain I dropped my Calculus class about 20 minutes ago. I am sad that I couldn't finish the class. I don't like feeling like a failure. I know that I bit off more then I could chew, so I am also relieved. Now I can keep my GPA up and have a little bit of fun with my summer classes.

Enough of that now on to lunch! I had a really pretty salad with field greens, onions, tomatoes, chicken, and avocado. (Did you know that the word avocado comes from the Nahuatl word ahuaca, they were the people who lived in Mexico, before the Spaniards came about) well I had it with a low fat seaseme ginger dressing. It was good but I only ate about half of it. I can't eat a whole lot of salad with out feeling a bit queasy.

The only bad thing is my poor avocado got some discoloration, it tasted perfect though.

Well on to a peaceful and relaxing weekend.

WHOOSH

I feel a whoosh of nerves running over me. I am super scared of the test that is coming up tomorrow. I think that with my night of studying planned and the fact that we get to make a note card, I may be able to do well on this test. I think that I have prepared myself as much as I could and now only God knows what the future holds. If I do well I will stay in Calculus and stick it out. I will keep up the work, but if it turns out bad, I'm gonna have to drop it. I really don't want to drop it! Well enough of the nervousness, I had a really rushed lunch and I had to buy it. Poo poo on that. I had a turkey sandwich from subway. I didn't get any cheese and had it with tons of veggies and mustard. I guess by tons of veggies I mean, spinach, tomatoes and onions. Still I have come a long way from just meat and bread. Some times I want to get bell peppers, but they are always way too overpowering on my poor sandwich. Well now I have to get ready for my Geography class. Have a good rest of the day.

Thursday; One day and Two weeks to go.

I am excited and scared of the amount of time that is left for these summer courses. Its frightening that I only have two weeks to miraculously pass Cal 1 and my other two classes. I am not afraid of my other classes, but I have come to an epiphany. If I don't do well on this test in Cal 1 I am going to have to drop it due to the fact that I can't pass. Well I will have a study session today after class and try to get as much help as possible. Then if I need to I will go to the Q Lab and get even more help. After that when I get home I will be up as long as it takes to cram all of this material into my head. This summer has been too stressful. I will never ever, in my wildest dreams take a math class in the summer. After I am done, I will have to start praying that Steven's Cal 2 class goes well and that he has an excellent teacher.

Last night we went to Buffalo Wild Wings. I made a good decision and had there grilled tenders with a side salad. The only thing I would warn against is there dressings. I ordered the raspberry vinaigrette and it looked like a package of cherry syrup. I ended up not using it and just putting some of my wing sauce (that was incidentally on the side) into my salad. It was very good and spicy. I had a couple of Steven's potato wedges, but all and all it was a very nice and healthy meal.

My fuel tank is running close to E

I have never been this exhausted in my life. I had a good lunch though and it was eaten, middle eastern style. No forks, spoons, knifes, just my two hands and some delicious Israeli couscous and steak strips. Along with that I had some yogurt and string cheese. Normally I would have gone with just the steak and couscous, but I had like a quarter of a cup of that left over from last night. So supplementing to the rescue. I have to use up my lettuce soon it's gonna go bad. I have that problem all of the time. I buy these nice salad greens and they end up wilting in the refrigerator. No biggie tonight I'll make a big salad with leftovers. there is a possibility of pasta too!

Feeling a bit slugish

I am really not feeling my A-game today and I don't know why. Yesterday when I got out of the Q- Lab, I got my lunch and ate it. Then my stomach started feeling a little bit queasy. It stayed like that all day long. I don't think it was my lunch, but maybe it was because I ate too fast and it upset my sensitive digestive system. Oh well hopefully it will go away today. I have the sneaking suspicion that it is stress induced.
Breakfast was great this morning I had oatmeal with 1/2 a banana, a tbsp of chia seeds and a tbsp of natural peanut butter.
I accompanied it with Coconut Chai tea, I really think black tea is the way to go in the morning since it does have a good amount of caffeine, I get a nice wake up.Do you like my unseasonable Christmas cup? It was a choice between that and an Easter cup, I went with Christmas!
I decided to evoke my DJ skills and mix it up a little for ya!Breakfast is important and it is important that it is delicious, so now all I have to worry about is the fact that I forgot to bring utensils with my lunch.

One horrid day

I got my first calculus test back and it had an unmentionable grade on it, even after the 18 point curve. I just have to keep my head up and pray that all will end well. I was really depressed after I saw it and even contemplated crying, but I will survive. I have been getting extra help and I will be attending any study sessions from here on out (even if they are at 7:00 pm). I know I will have to start trying much harder if I want to pass this class.

One question that has been cycling through my head is, why does a 4-8 teacher need to know calculus in any sort of way. I really can't pin-point it because I know that I will see nothing close to this in the class room. Maybe they are testing me trying to see if I am smart enough to get through this horrendous class. All and all I must pass it. I couldn't stand the thought of going through this class again.
So study hard and pray even harder!

Tuesday-Smoosday

Another great morning for me, I get to do a Thai linguistic project first thing. Then to calculus where I am doing splendidly. Not exactly splendid, but much better then I had been doing in the beginning.

My little brother is in town, just in case you didn't know, he has been in Afghanistan, for the past year and is back in good ole' Texas. I am really excited to hang out with him and have a ball.

Summer School is taking over my life!

All I can think about everyday when I get home from school is there is only two weeks and 4 days left (that's as of today actually). Now, that kind of sucks because I have been going everyday from 9:15-6:00pm.

Well I had a really nice dinner, Chicken stir fry, with my nice sauce. I had a baby banana for desert which was really nice. I love the baby bananas, they taste just like regular bananas, but mini-sized. I don't know why I had to buy them, but when I saw em' I knew I had to have em'.

When I went to the grocery store, I brought my little sister with me. I love taking her with me to go grocery shopping. Its kind of a fun thing for us. We like to go through all the aisles and look at what the store has to offer. I think it comes from my father making us go to the grocery store with him. We would always have to go to the store late at night and walk down every single aisle. I didn't like it back then, but now I love it. Well I'm gonna finish watching intervention check ya later.

7:00 pm Dinner
1 chicken breast (78), a handful of bean sprouts, 1/8 cup of onions, some garlic, an egg(65), and some special sauce that I made from scratch.

Ahhh......

I am exhausted as of right now! I still have one more class after this and I am done for the day. My math class has gotten a little bit easier to handle ever since I have been going to the Q Lab to get things done. Other then that things seem to be going pretty well. There is one exception however.

the Tupperware in particular. It has this funky taste to it and I think it maybe time to throw it away. I have washed it too many times I guess and now I can taste either A: the plastic as it leaches out of the container into my food or B: the soap being used to wash the container that hasn't been rinsed out. I feel that B is highly unlikely since I either put it in the dishwasher or wash it myself. So on the hunt for a new tupperware thingy that will not break down and turn me into a plastic-Kayla hybrid.

Only Three More Weeks

Well that's it and my summer of relaxation begins. I am still a tad bit worried on the math end of it, but I will prevail. Man I can't believe how fast things are going. By Wednesday I will be half way through. I really cannot believe it.

Last night was amazing! For everyone who is living under a rock, you missed the premiere of True Blood. If you haven't seen it before you need to watch it. I love everything true blood.

Bridezillas/True Blood

I am so excited about True Bloods new season, it starts today! As of right now I am watching Bridezillas. I love watching how terrible these girls can be. I hope when my wedding comes around I can be as crazy as them. No No No just kidding, I really am excited about my own wedding whenever I see this show. Not about all the drama and such, but about how fun they turn out to be. Well right now I am going to finish watching Bridezillas and then go visit my mama.

Kickin' up ma' feet

Well it is the weekend and now I finally able to relax, At least for the rest of the night. I got out of school around 5:45 and drove home. 1604 was a breeze this Friday, a complete opposite of last week. I visited my mama, and we had a nice glass of red wine. We got to talk about my little brother coming home from Afghanistan. I am so glad he is home and safe. He is still the same old Robby though. Then I came home and got into major relaxation mode. We ate Whataburger for dinner. I don't know the calorie count on it, but I am sure it is too high. I don't even want to know how many calories I ingested. It's ok though, I really enjoyed each bite of it.

I am going to squeal with delight when it starts. My favorite character in the series is, of course, Sookie Stackhouse. I have read all of Charlaine Harris' books that the series is based on. I just love how everything turns out on the screen. I have gotten my sister and my mother hooked on the books. I love it! well gonna watch some TV and then go to sleep.

Man O Man
I have been studying like a maniac! I can not wait until these summer classes are over with. I haven't devoted this much time to school in quite a while. I know that sounds kind of bad, but I really haven't. I usually get to be leisurely with my assignments and work through them a little each day and I usually understand the material. That is all good and well when you are taking night classes once a week. I now have class everyday and there are assignments that have to be done and studying for calculus during any free time I have. It is not how I would have liked my summer to go. The up side to this is that I am seeing the light at the end of the tunnel for math. I understood 95% of what the professor was talking about and I asked questions. I don't know why it is so hard for me to ask questions in math class. Its like a subconscious thing, I guess, because I can ask tons of questions in my other classes. Then math comes around and I zip my lip.

If I can learn anything from this experience it is that you have to not worry about what others think. I was afraid that if I asked a question some smart-alec in the back would answer it and everyone would laugh at me. (Hello am I in middle school again?) Now I realize that, yes some people do understand the concepts I am asking about, but they are not giving me there grade. I have to ask lots of questions, its the only way I will learn. Well I am off to take my geography quiz I just hope I can remember all my eastern european countries.

Fa-Fa-Fa-Friday!

I love Fridays so much I just can't stand it.I know I still have to be in class until 6, but after that I am free for the next two days! Wow, isn't that amazing? Back to reality though I still have to study for calculus over the weekend, figure out what I'm gonna say for my ESL linguistics project, and see my little brother who just got back from Afghanistan.

I am so proud of my two younger siblings, they have succeeded every expectation. My younger sister graduated from high school last weekend and it was such an emotional experience. I've been to other graduations and they were no biggie. I was happy and proud of those people, but when it is your family and you have seen, first hand, the struggles that they have overcome you just get a little emotional.
My younger brother is serving in the military and I am so glad that he has made it back in one piece. As of late, I have been checking the news on the war making sure that he was still alive and freaking out when our soldiers die. I really feel for the families that have lost loved ones overseas. I don't know how I would cope if I lost him. I just thank God everyday that he is still here and not in danger. Ok, off of the soap box for now.

I noticed that I haven't been doing my calorie counts but I have managed to lose three pounds this week. You Go KAYLA! I have had my slip ups, but if I stick with it I think it will come out with positive results. I am going to start the abs diet for women next week. I have tried it before with awesome results so hopefully I will get everything that I am looking for.

Genghis Grill

After school, we went to Genghis Grill, I love Genghis grill so delicious. I love going there because you get to build your own stir fry bowl and they cook it on a giant circular grill. My favorite part of it is they give you a moderately sized bowl and you have to try to find a way to get as many veggies on top of the meat. I usually make a huge mess and feel bad, but it's really fun trying to challenge myself and see how high I can stack everything. I got half of my bowl to go so I didn't over eat. Yay me! Well I am going to study for my ESL class and find some things on the thai community.

I am not crazy!

With some pushing and shoving, I finally went to the Q Lab and now I feel like I can finally do some calculus. I also am kicking myself that I didn't go there earlier. It helped me so much and everyone there is so nice. I stayed for an hour and a half and got all of my section 3.1 homework finished. I rushed to get something to eat at subway and here I am. So as I stated I am not crazy, I can do calculus, and I am amazing! Today should be the beginning of less stress and more confidence in myself.

Morning

Well since I had a really non-nutritious dinner last night I decided to have a light breakfast.It consisted of a little more then a half cup of low fat cottage cheese and some dried cranberries. quite delicious, if I do say so.

Well I didn't post much last night because I was having one of those days where everything just seems to work against me. My Calculus test did not go as good as I would have liked it to. I am now destine to spend my days in the Q. Lab at school so I can pass my class. I WILL NOT FAIL!
Back to last night, after getting extra help with chapter three in math, we went to steven's friends house, where I decided it would be a good idea to drink rootbeer vodka. Fail #1 It was a school night and drinking doesn't go well on those nights. Fail#2 I don't drink vodka, it gives me headaches within minutes of ingestion. NON-Fail, I didn't not wake up resenting life though because I only drank two of the said drinks. Maybe I should just forgo drinking for the next couple of day since it isn't anything that I necessarily need. Now off to ESL where I get to research the Thai culture. I'm quite excited!

Finally time to relax

I finished my cal test, went to my parent's house, came home to have a delicious dinner dinner of little Cesar's pizza. Yay go nutrition. Right now I am taking time to relax so I will be back tomorrow.

I am really tired and had dreams about numbers all day long twas not a great night sleep.
I hope that everything goes well in my calculus test.

Well for breakfast I had a really yummy scramble as seen below
It consisted of 1 egg, 1 egg white, sauteed mushrooms and onions and a little bit of low fat cheese.Then I had a nice cup of coconut chai tea, I was a little bit afraid of the taste since I tried Starbucks chai tea latte and did not enjoy it very much. I think the exclusion of milk and sugar made the goodness come through. I rarely drink my tea with milk or sugar. I like the flavor of the tea to shine through.
Oh yes you can't forget my beautiful reindeer fork he is so excited to dig into breakfast "can't wait".

I am about to go into class wish me luck on my test I'll tell you how it goes :)

Studying for calculus :(

Well I am thinking that calculus is not my thing , but I may have gotten somewhat of a handle on it. This is good, also another good thing is that I don't have to stay until 5:45, So after the test I get to go home and relax. Yay! Well for dinner I had chicken stir fry with brown rice soba noodles it was delicious. Well going to go back to studying so I don't fail miserably.
